This year for Halloween we stayed at home, and had my parents over for dinner. I made Minestrone soup. I tried to make a few things that I saw on Pinterest, but unfortunately they did not turn out. I attempted to make jello worms that look just like earthworms, and Halloween cake pops. I guess I will have to try again next year.
I love to make Minestrone Soup it is so yummy! Here is my recipe if anyone would like to make it:
3 slices bacon
1 clove garlic, minced
1 medium onion, minced
2 stalks celery, diced
2 carrots, diced
1 large potato, diced
1/2 head cabbage, sliced
1 28oz can stewed tomatoes
1 tsp basil
1 tsp salt
1 15 oz can kidney beans
2 qts soup sock or 2 qts water plus 5 chicken bullion cubes
4 oz dry spaghetti, broken into 1 inch pieces (approx 1 cup)
In large pot fry bacon. Remove bacon and retain 2 tbs grease in pan. Add garlic, onion, cellery, carrots, potatoes, and cabbage. saute for 20 min, stirring often until veges are tender but crunchy (this step is vital for full flavor). Add tomatoes (puree), basil, salt, beans and stock. simmer 30 min or so. add spaghetti and cook til tender- abt 10-12 min.
This recipe takes a lot of time to make, but well worth it. Plus if you have leftovers it tastes even better the next day.
